It’s easy to make with prep time no more than 20 to 30 minutes.
You can go to your local supermarket fish counter and buy a sizeable assortment of seafood – prawns, muscles, scallops, calamari rings. Most offer pre packed seafood mix……alternatively, having flaked salmon, mackrel is just as good – entirely depends on what seafood you prefer.
Most UK restaurants use Iceberg lettuce – however British Cos lettuce is available, as is Romanian Heart Lettuce…these last two are nearer to the lettuces grown in the mediterranean.Ironically – these lettuces are cheaper than Iceberg! On the onions – I prefer red onions because of the sweet taste – also, pealing and chopping it is not as painful as a normal onion…..no more tears! lol.
I prefer Plum or Pomodorino tomatoes – these have a full bodied, delicious, sweet flavour – unlike the standard English tomotoes…………..the taste of the tomato in this salad is crucial.
For the dressing – I prefer what the Turkish and Italians use – simply freshly squeezed lemon mixed with olive oil, a pinch of oregano, paprika and a drop of white wine vinegar. I try to avoid pre made dressings in bottles as they have high fat and there’s nothing better than making your own. Experiment and see what sort of taste you prefer – in Turkey, they love more lemon – but that may be too bitter.
Ingredients5 tbsp olive oila pinch of oregano & paprika (option)600g mixture fresh prepared seafood or 1 x pre-packed or any other seafood you prefer as mentioned above.1/2 red onion – finely chopped1 ripe plum tomato1/2 cucumber – chopped into small triangles – peal the skin off before chopping.1 tbsp chopped fresh mint, plus extra leaves to garnish1 small clove garlic, roughly chopped2 lemons1 x Cos style lettuceSalt (sea salt)Freshly ground mixed peppers
If you are preparing this for friends – serve in a large white bowl….because of the vibrant colours, the white bowl can highlight the superb salad you have prepared….it will look and taste delicious
